Franola

There is no ‘f’ ingredient in this recipe but my daughter called it Franola instead of Granola when she was about two and since she’s five now going on fourteen, we call it Franola to remind us of her as a child.  Because like I said, she’s going to be fourteen soon.  She has even mastered the rolled eyes and ‘whatever’.  Sooooo mastered it in fact, that we have ruled out the word ‘whatever’ in our house completely.

Maybe a smidge over the top?  I think not.

And since the two week marathon that is the Christmas holiday/New year’s-eat-like-the-Mayan-calendar-world’s-about-to-end has come to a close, I’m ready for a little healthy in my world.  Just a little though, let’s not go crazy.

This would also make a great gift for someone special as an alternative to cookies and cupcakes.  Probably not as good as buttery, sugary and sweet, but it’s an alternative 🙂

Granola

3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded coconut
1/4 cup plus 2 TB brown sugar
1/4 cup plus 2 TB maple syrup
1/4 cup warm water
3/4 Teaspoon salt
1 cup raisins

1.    Preheat oven to 325.

2.    In a large bowl combine oats, nuts, coconut, and brown sugar.

3.    In a separate bowl combine syrup, water and salt.  Combine both mixtures and pour onto jelly roll pan.

4.    Cook 11 minutes. Stir. Cook another 19minutes.
